A spicy blend from the Malvan region of Maharashtra, often used in seafood dishes and known for its complex, fiery flavor profile.

Malvani Fish Curry (serves 2)

Ingredients:

  • 250g fish fillets, cut into pieces
  • 1 onion, finely chopped
  • 1 tbsp Malvani masala
  • 1/2 cup coconut milk
  • 2 tbsp oil
  • Salt to taste

Instructions:

  • Heat oil, sauté onions until golden.
  • Add Malvani masala and cook for a minute.
  • Add coconut milk and bring to a simmer.
  • Add fish pieces and salt. Cook for 5-7 minutes until fish is done.
  • Serve hot with rice.

Fish Fry (serves 2)

Ingredients:

  • 2 medium-sized fish steaks
  • 2 tbsp Malvani masala
  • 1 tbsp rice flour
  • 2 tbsp oil
  • Salt to taste

Instructions:

  • Mix Malvani masala, rice flour, and salt.
  • Coat fish steaks with the mixture.
  • Heat oil in a pan and fry fish until golden and crispy on both sides.
  • Serve hot with lemon wedges.
